Story of Galette
The savory crêpe (crêpes salées) or Galette Au Sarrasin [galɛt o sarazɛ] is made with buckwheat flour. The name “galette” comes from the French word galet (“pebble”or stone), stemming the first gallettes which were made on a large flat stone heated in a fire. This would often be used in place of bread as basic food. Galettes are completely different in texture and flavour from sweet crêpes because of the buckwheat flour (also called sarrasin or blé noir in French). Despite the name, buckwheat is not really related to wheat. It is actually a fruit seed that is related to rhubarb and sorrel. It has a rich, nutty flavor and a very high nutritional value and is naturally gluten free. The galettes with fillings of vegetables, meat or fish offer a full meal and are traditionally enjoyed with a cup of sparkling cider.
Story of Crêpes
Crêpe [krɛp] is the French word for pancake. It originates from Brittany in the northwest region of France where they make them extremely big and paper thin. Nowadays almost every country has its own version of the crêpe, but it was in Brittany where the tools and techniques were created and perfected, elevating the crêpe to an art form.

The sweet crêpe (crêpes sucrées) has earned its recognition and popularity, mostly as a dessert, and is made with wheat flour. You can make the specialty of these crêpes vary in flavour with numerous sorts and combinations of delicious fillings as well as in its most simple form with some sprinkled confectioner’s sugar.
